Certified Organic Hard Red Spring Wheat
Hard red spring wheat is planted in spring and harvested in the fall. It has the highest protein content of all of the wheat varieties. Milled into flour, this nutty-flavored variety shines brightest when used in bread, especially sour doughs, croissants, and pizza dough. Spring wheat tends to have more gluten content than common wheat varieties. It also stores very well long-term when kept in dry and cool areas, in pest-resistant containers.

Certified Organic Hard Red Winter Wheat
Hard red winter wheat is planted in the fall and harvested the following summer. Milled into flour, this variety shows off its sweet and signature nuttiness very well, shining brightest when used in breads, pancakes, cookies, etc. It's your "all-purpose flour" in the freshly milled flour world. It also stores very well long-term when kept in dry and cool areas, in pest-resistant containers.

The difference between raising crops with the tools that God has provided in nature and using chemicals and artificial fertilizers is staggering. We have invested countless hours relearning how to farm! Instead of applying replacement levels of major nutrients and trace mineral packages ahead of each crop, we plan years ahead to get nature to make available what the crops will need. Choosing an effective crop rotation has many aspects to it. You need to set up your cover crops as well as cash crops for plant health, nutrient cycling, tissue breakdown schedule and as every gardener and farmer knows all too well, battling weeds! We haven't even scratched the surface on understanding our soil and the incalculable amount of life that resides in our soil. From Worms and beneficial insects to bacteria and fungus, we treat the life in our soil life like livestock! Instead of killing all that biology with chemicals (inadvertently), we feed them with living roots that secrete sugars, varieties of plants that decay on different schedules and crop rotations that provide balance to the soil and of course, regular doses of MANURE! Raising food grade grains requires healthy soil and that's what we seek to provide our crops! I bet the end products taste better too... what do you bet? :)
